Notoriously easy to grow, eggplant is also known to have high yielding harvests. These purple wonders may take a some time to mature but they are worth the wait! Once cooked, a bold richness, and creamy texture comes through that can only come from homegrown eggplant. You can plant it with other sun lovers such as beans, cucumbers, peppers, and herbs!
Planting and Care Instructions
Plant Eggplant in full sun 18"" apart. Water 3 times per week. Too much nitrogen in soil can cause infertility and reduce yield. Harvest when lobes are 7-8 inches long and about 4 inches wide.
